Flourless Peanut Butter + Oatmeal Cookies

These peanut butter + oatmeal cookies are inspired by Amanda Watters' incredibly easy (flourless) PB cookie recipe. My spin calls for: 1/2 cup sugar, 1/2 cup natural PB (I used Justin's Honey PB), 1 egg, 1/2 cup old-fashioned rolled oats, 1/2 tsp vanilla, and sea salt to taste. Mix all but sea salt together and roll into balls, smash/cross-hatch with fork, sprinkle with sea salt, and bake in 350 oven for 8-10 minutes. This will make you 6 nice sized cookies, friends, and best of all...is the easy clean up gets done while they bake!
