Balancing mom-life, work-life, cooking healthy, and feeding what feels like a tiny horse who never stops eating, is a big job! But, I found something Silas likes to eat everyday, just like his mom - gluten free oatmeal, fresh fruits, and yogurt.
Here are some simple ways to have breakfast ready in the morning with very little effort:
-Make oatmeal the night before.
-Pre-slice fruits and place them in a container with a paper-towel on the bottom (to keep them from turning into wet mushy mess), and store them in fridge.
Overnight Oatmeal
Boil 1 1/2 cups water in a Dutch-oven
Add 1 cup oats and pinch of salt
Cover the pot with a lid, and turn the heat off
Oats will be perfectly done the next morning
Top it with fruits, nuts, seeds, yogurt, and honey
