Basic Crepes

Sometimes I fancy. Fancy but lazy AF because basic crepes has to be the easiest thing to whip up. I use a variation from Allrecipes.

Ingredients
1 cup AP flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 tsp. salt
2 tbsp. butter

Directions
1. In one container, mix dry ingredients - flour, salt. Set aside.
2. In a separate container - mix milk, water, whisk in 2 eggs.
3. Sift in the dry ingredients into the milk mixture and whisk to combine. Add in the butter. Mix well. Add little more water if the batter is too thick or until it’s crepe consistency.
4. Heat non-stick pan on medium high heat.
5. Ladle in your batter (I use 1/3 cup measure for my pan size), swirl the pan quickly to form a crepe.
6. Cook crepe for about 2 minutes or until slightly golden, then flip for another 1 minute or so.

I love basic crepes with just a squirt of lemon and icing sugar. But stuff them with Nutella, cookie butter (omg), caramalized apples or whipped cream...top with whatever you like from slivered almonds, banana slices, or berries. Whatever your heart desires really, manifest it and it shall be so!
