Who could resist those teensy-weensy potatoes at the supermarket?!
I boiled these for about 10 minutes and then
tossed them with some olive oil and salt,
and roasted them for about 25 minutes.
Served alongside a dollop of cilantro-garlic sauce
and you've got yourself a super quick weeknight side dish!⠀
