Baking to cope with stress, because I just put together our house projects, Caleb's work schedule, and the kids are starting school and I'm already tired. Anyone else bake as an escape? Or did I just define baking?
Rosemary Peach Pie
Ingredients
6 peaches peeled, cored, and thickly sliced
1 sprig rosemary chopped
3/4 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
Directions
1. Mix ingredients together and put in a Cornmeal Dough (any pie dough will do).
2. Bake at 425 degrees for one hour, cover if it starts getting too brown.
3. Cool completely before serving.
*Also, do yourself a favor and whip cream with a bit of confectioners sugar and bourbon to serve on the side.
