The last few leaves on the giant tree that shades our front porch are weakly swaying with big bouts of wind and rain. Dreary days inspire me to simplify my mornings, which always (ironically) leads to the fussiest meals. Made this pile-on-everything-in-sight toast by our big south-facing window to enjoy a little winter light and it was such a cozy breakfast (it's plant-based, too!).

Recipe: Nut butter, chia, pumpkin, and sunflower seeds, a ripe banana, a healthy pinch of San Juan Island Sea Salt, and an even healthier dollop of brown rice syrup. All atop some fresh Proven Bread sourdough goodness.
