I'D NEVER EATEN KRAFT DINNER. The first time I saw it as a kid, I didn't even recognize it as macaroni and cheese (pretty much my favourite food). My mom always made it from scratch, quick as a wink. She was a master.

Now with two little people of my own, this dish is on heavy rotation. And I make it from scratch just like she did. I'm definitely not opposed to KD (there is something weirdly alluring about neon noodles), but why buy the box when this whips up in about the same amount of time, and is packed with real food goodness?

The trick is to not add in the grated cheese until the heat is off. That way it won't get all grainy on you. For an even quicker lunch, skip the béchamel and stir in a splash of heavy cream after draining, add salt and pepper, then add in your grated cheese. Stir until cheese is melted and sauce is creamy, then serve.
